L&rsquo;\u00e9p\u00e9piner d\u00e9licatement. Enlever la pulpe et la couper en lamelles fines, en \u00e9vitant la chair proche de la coque qui est plus coriace. Cette op\u00e9ration requiert de l&rsquo;habilet\u00e9, de la d\u00e9licatesse et de la prudence car le couteau, n\u00e9cessairement bien aiguis\u00e9, peut glisser et blesser.<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Peser la pulpe<\/strong> jusqu&rsquo;\u00e0 atteindre 1kg (production moyenne d&rsquo;une past\u00e8que classique).<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Verser les lamelles dans un large saladier \u00e9maill\u00e9.<\/strong> Ajouter le citron et l&rsquo;orange totalement r\u00e2p\u00e9s en zestes.<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Enlever ensuite la peau des agrumes et le ziste<\/strong> (partie blanche am\u00e8re qui entoure la pulpe). Couper l&rsquo;orange et le citron en rondelles. En extraire la pulpe et l&rsquo;ajouter sous forme de petits morceaux fins dans le m\u00e9lange de lamelles de past\u00e8ques.<\/p>\n<p style=\"text-align: justify;\">&#8211;<strong> Ajouter la gousse de vanille<\/strong> d\u00e9coup\u00e9e\/ou\u00a0la vanille en poudre.<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Verser le sucre<\/strong> et m\u00e9langer tous les ingr\u00e9dients en ayant soin d&rsquo;enrober tous les \u00e9l\u00e9ments de ce sucre jusqu&rsquo;\u00e0 former un sirop. Ce sirop &laquo;&nbsp;cuit&nbsp;&raquo; d\u00e9j\u00e0 les fruits.<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Laisser reposer<\/strong> une nuit ou une demi-journ\u00e9e.<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Verser le m\u00e9lange dans une bassine<\/strong> de cuivre \u00e0 feu doux<\/p>\n<p style=\"text-align: justify;\">&#8211; <strong>Laisser cuire 3h \u00e0 4h<\/strong>, en tournant de temps \u00e0 autre. Pendant ce temps, pr\u00e9parer des pots et des \u00e9tiquettes<\/p>\n<p style=\"text-align: justify;\">&#8211; Quand la confiture a commenc\u00e9 \u00e0 prendre l&rsquo;aspect d&rsquo;un sirop \u00e9pais, la verser dans les pots et les fermer imm\u00e9diatement.<\/p>\n<p style=\"text-align: justify;\">&#8211; Laisser refroidir.<\/p>\n<p style=\"text-align: justify;\"><strong>Notes :<\/strong>\u00a0La past\u00e8que \u00e0 confiture n&rsquo;est pas comestible crue. C&rsquo;est apr\u00e8s sa cuisson qu&rsquo;elle devient int\u00e9ressante. On peut garder les graines \u00e9p\u00e9pin\u00e9es pour les replanter l&rsquo;ann\u00e9e suivante, si elles sont bien rouges et brunes.
